Crock Pot Chicken Quinoa Soup

After our week to the beach and 6 previous months of lots of fast food and delivery, we knew that we needed to start eating better. Unfortunately, with two babies at the house, we don’t have time to do too much cooking. So, it’s time for another handy dandy crock pot meal! This one couldn’t be easier!

Ingredients:

  • 4 frozen boneless chicken breasts (thanks Costco bag in our freezer)
  • 1-2 cups of quinoa
  • frozen broccoli
  • carrots
  • 3 cans of chicken broth
  • seasoning

Directions:

  • Soak the quinoa in a bowl of water overnight (or at least an hour or two). Rinse well to get rid of the naturally bitter taste (I used a splatter guard as a strainer).
  • Dump all of the ingredients in the crock pot.
  • Cook for 6-8 hours on low or 4-5 hours on high.
  • Serve in a bowl.

Of course, with this recipe, you can add any veggies or seasoning that you want. You could do other meat as well, but we felt like having a variation on chicken rice soup. It was really delicious, and the “prep” was about as easy as it could be. We had tried quinoa once before, and we hated it, but that was because we didn’t use any seasoning or pre-rinse it. With just those added steps, it’s so good and so healthy!

  1. I am retired but I still love cooknig in my CrockPot. recipes are endless and so good. I make a beef roast in mine and use three seasoning packets, Ranch, Peppercorn and Italian. Out of this world taste.
